Fish fillet with kimchi remoulade, lime, and cress
White asparagus with shrimp, yuzu/browned butter hollandaise, and chives
3rd serving:
Grilled lamb glazed with ume plum and parsley
Roasted young chicken with rhubarb BBQ
Green asparagus, carrots, spring onions, and new potatoes steamed with lovage, served with chicken sauce with rhubarb and long pepper
4th serving:
Rhubarb crumble cake with yuzu and rich crème fraîche
